Tom is a passionate artisan bread maker, nutritionist, and foodie. Tom is an experienced bread maker and focusses on slow-fermented artisan and sourdough breads. Tom is an experienced teacher and an engaging communicator, with a wealth of knowledge and skills to share on his favourite subject - real bread!

If you'd like to learn the essentials of bread making, Tom would love to show you the ropes. Tom runs group classes regularly at his home in South Birmingham, where you will experience baking in Tom's handmade, outdoor, purpose-built earth oven, and experience the amazing flavour of wood-fired bread. Tom also teaches individuals, families, corporate, and community groups and can come out to teach in your own kitchen.

Tom usually teaches over 18's but can teach youngsters if accompanied by an adult.

If you are at a more advanced level and are in the Birmingham area, Tom would love to hear about what you do, and perhaps collaborate on bread projects, so do get in touch.

Tom is the director of Loaf, a food-based social enterprise based in Birmingham. Profits from Tom's bread making get put towards projects aiming to promote real food in and around Birmingham, such as campaigning about locally produced food. Tom also runs a community bakery from home every Friday.

Group Classes

Bread: Simply Sourdough

Sourdough makes the best bread, no wonder it’s been a staple food in many parts of the world for thousands of years. This course is suitable for those that have a little experience of making yeasted loaves and are keen to step it up, and it’s perfect for graduates of ‘bread: back to basics’. You’ll see the whole sourdough baking process through from refreshing the starter to baking the loaves in the wood fired earth oven. The course starts on a Friday night, where you’ll refresh the rye sourdough starter, and mix and knead the wheat sourdough. You’ll return on Saturday morning to shape your wheat and rye loaves, and enjoy a brunch of sourdough English muffins. We’ll discuss equipment too, and how sourdough baking can fit perfectly with a busy lifestyle.

Bread: back to basics

Tom will lead you through an enthralling tour of all things bread. The day will cover all the essentials of breadmaking from equipment, to ingredients, to technique. You’ll be rolling your sleeves up and making all the loaves yourself, and baking pizza’s for your lunch in the wood-fired earth oven and there’ll be plenty to take home and share with your loved one’s too! Tom is a fan of slow-fermented bread and will introduce you to baking sourdough, but the day will mainly cover yeasted bread. Courses take place in a cosy home environment in South Birmingham, meaning that everything you learn can be easily replicated in your own kitchen. As well as learning some great new skills, you’ll enjoy picking vegetables and herbs from the garden, collecting hens eggs, firing up the earth oven, and dining al fresco.
